Asian Quinoa Bowl
I make similar type bowls when I don't know what to cook but have a few leftovers in the fridge. I had some roasted veggies and quinoa already prepped, so the whole "cooking" took no longer than 10 minutes.
I have a very relaxed attitude when it comes to exact measurements, unless I am baking of course. So, I encourage you to play around with the sauce consistency until it looks and tastes good to you. The dressing is key ingredient in this recipe. It really does turn the most boring, bland meal into something interesting.
INGREDIENTS
Roasted veggies: purple + white potatoes, zucchinis, fennel
Boiled quinoa
Mushrooms
Firm tofu
ASIAN SAUCE
Ginger (to taste)
1/4 cup water
1/3 cup organic tamari (or soy sauce)
3 tsp. almond butter
4 garlic cloves
Blend everything in Vitamix (or other high-speed blender) until creamy.
Simplicity is key, healthy doesn't have to be complicated!
