Gluten-Free Oatmeal Pancakes
I am in love with this effortless gluten-free pancake recipe!
You know me, I like to keep things simple and this recipe is so easy. These pancakes are fluffy, sweet, with hint of cinnamon. YUM!
2 cups gluten-free oat flour
1 cup almond milk (or other milk alternative)
2 large eggs (or flax "eggs")
1/2 mashed ripe banana
1 teaspoon baking soda
2 tablespoons coconut oil or butter (melted)
2 tablespoons maple syrup (or your sweetener of choice)
1 teaspoon vanilla extract
pinch of salt
1 teaspoon of cinnamon powder
Place all ingredients in a blender and pulse until well combined. Use a hot skillet and a dab of coconut oil for the 1st batch.
