Gluten-Free Oatmeal Pancakes


I am in love with this effortless gluten-free pancake recipe!

You know me, I like to keep things simple and this recipe is so easy. These pancakes are fluffy, sweet, with hint of cinnamon. YUM!

INGREDIENTS:

  • 2 cups gluten-free oat flour

  • 1 cup almond milk (or other milk alternative)

  • 2 large eggs (or flax "eggs")

  • 1/2 mashed ripe banana

  • 1 teaspoon baking soda

  • 2 tablespoons coconut oil or butter (melted)

  • 2 tablespoons maple syrup (or your sweetener of choice)

  • 1 teaspoon vanilla extract

  • pinch of salt

  • 1 teaspoon of cinnamon powder

METHOD:

Place all ingredients in a blender and pulse until well combined. Use a hot skillet and a dab of coconut oil for the 1st batch.

Serve with honey, fruit, or a hazelnut spread. Here is a YouTube video all about how to make a healthy hazelnut spread it from scratch.
