Gluten-Free Blueberry Sweet Bread

I have a lot of fun healthy dessert recipes coming soon, but today I wanted to share with you how to make a yummy, lip-smacking blueberry sweet bread that is free of dairy, gluten, and refined sugar. It’s like a giant blueberry muffin that’s high in protein, simple to make, and will not fall apart on you! Top it with coconut whipped cream and you’ve got a very satisfying, healthy treat!
INGREDIENTS:
sweet bread (large, 9x5’’ loaf)
2 1/2 cups almond flour
3/4 teaspoon baking soda
1/4 teaspoon sea salt
4 eggs, room temperature
1/3 cup coconut oil, melted
2/3 cup maple syrup
1 teaspoon lemon zest
1 tablespoon lemon juice
2 tablespoons vanilla extract
4 ounces blueberries
coconut milk whipped cream
1 can of full-fat coconut milk
1 tsp of vanilla extract
Maple syrup (to taste)
INSTRUCTIONS:

1. Place a can of full-fat coconut milk in your fridge overnight (or at least for 8 hours). The cream and water will separate during the night.
2. In the morning, take the can out of the fridge, open it, scoop out the creamy top and place it into a mixing bowl. Add vanilla extract and maple syrup and beat on high speed with a hand mixer until soft peaks are formed. Place in the fridge until ready to be used.

1. Preheat oven to 350F.
2. Grease a medium size cake pan with coconut oil. Set aside.
3. In a bowl, mix your dry ingredients well. In a separate bowl, whisk together the wet ingredients. Pour the dry ingredients into the wet ingredients and mix until well combined and there are no clumps. Pour the batter into previously greased cake pan and top with blueberries (I pushed the blueberries towards the bottom of the pan with a spoon, but you can just leave them at the top).
4. Bake for 25 minutes on 350F. Take out of the oven, let cool completely before serving.
5. When the bread in cooled, serve with coconut whipped cream on top and enjoy!
